2 tablespoons olive oil
1 medium onion, chopped
1 to 2 cloves garlic, minced
1 can (28 ounces) crushed Italian plum tomatoes
2 cans (7 ounces each) sliced mushrooms, well drained
1/4 cup water
2 tablespoons tomato paste
1/4 teaspoon dried basil, crumbled, or 2 tablespoons chopped fresh basil
Heat the olive oil in a large heavy saucepan. Add the onion, and cook over medium heat until tender, about 3 minutes. Add the garlic; cook and stir for 1 minute more. Stir in the mushrooms, water, tomato paste, and basil; reduce heat to low and simmer for 30 minutes. Cover to keep warm.
